Snow, custard pie and bran muffin recipe

What a fun snow we had. I absolutely enjoyed every minute of it! The snow is rare, which probably makes it a whole lot easier to love. But goodness, it was a nice change of pace. We spent so much time home, kids and all, just relaxing, playing, baking and storing up on together-time knowing that the restaurant will soon be open and who knows when the next time we will be able to just lay-low like this.

Preheat oven to 375 degrees.

In a large bowl combine:

3 eggs

1 cup heavy cream

1/4 teaspoon salt or more to taste

1/4 teaspoon pepper 

1/4 teaspoon paprika

Sauté and then add to the rest of the ingredients:

1 bunch chopped collards or greens of your choice

4 cloves garlic minced


1+1/2 cups cooked and sliced fingerling potatoes 

Optional: 1 cup shredded cheese of your choice

Pour into an oiled pie pan and top with:

Lemon zest

Bake for about 25 minutes or until the center is fairly firm when you shake the pan.

3/4 cup coconut milk

3/4 cup safflower oil

1 cup wheat bran

3/4 cup oats

1 cup sugar

3/4 cup applesauce

1/2 cup rye flour

1 teaspoon cinnamon

Sift together and then add to the rest of the ingredients:

2 cups unbleached white flour

2 teaspoons baking powder

1 cup raspberries 

1 cup blueberries

Pour into an oiled muffin pan and bake for about 25 minutes or until a toothpick comes out clean.

What a week!

Goodness gracious, what a couple weeks. There is no one place I am supposed to be, no one thing I am supposed to be doing. Instead, I am balancing two hundred tiny—some big—things that all need to happen soon. . . There has been so much fun too! We had a visit from one of my best friend’s daughters, who is almost like a niece and her best friend. I love showing people Portland. It’s such a fun city, that is still sweet and remotely humble; although I don’t know how long that will last. It’s growing a mile a minute!


I’ve managed to fit in walks with my oldest; he prefers cold, rainy-day walks, and most of the time so do I. . .


And then of course there is pre-restaurant work. Silly little things like pealing off the old tenant’s lettering on the door. . .


To more dramatic things like painting with the Paiku dudes . . .


Lastly, back at home, the fury family members never cease to be hilarious. I have way too many pictures on my phone of one snorty creature or another. . .

Snow and a tiramisu recipe…

 We got SNOW!!! They had talked about it coming on Christmas, but no such luck. Still, in some ways this was even better. Right when the after Christmas blues were about to hit, a snowball did instead. Yes, LOTS of snowballs. We had a good, finger freezing, rosy cheeked blasting, snowball frenzy. It was lovely. We played in the day and then by evening when we thought the best of the snow was over it started up again, this time even bigger flakes. The kids headed outside once more and built a snowman by the yellow glow of the street lights.

Now for that tiramisu recipe: I have made tiramisu for years; this way and that way, with more ingredients and less. Sometimes using Kahlua sometimes with no alcohol at all. But this year I had an idea about using eggs which I usually omit. I don’t mind raw egg too much, but when we don’t have our own chickens to get them from I am more wary. So, what I did was make a custard instead. I am not a good judge when it comes to traditional tiramisu because I don’t know if I’ve ever had a truly traditional tiramisu. Most restaurants that sell tiramisu bring out something tasty but much sweeter than I can handle. Even this recipe is a little too sweet for me, but a far cry from what sugar load it could have. Sweet or not, it came out wonderfully, and I watched as in disappeared quickly from the refrigerator, nobody really fessing up as the one who gobbled the last slices.
Tiramisu Recipe
In a saucepan whisk until very smooth:
5 egg yolks
1 cup milk
2/3 cup white sugar
Put the sauce pan over medium heat and stir constantly until thick
about 5-10 minutes. Remove from heat and let cool.
Once the custard is cool add and whisk until smooth:
8 ounces mascarpone cheese
Brew 2 cups very dark coffee and dissolve 1 tablespoon of sugar into it.
Let cool entirely then add:
1 tablespoon whiskey
Whip 4 cups heavy cream until stiff then add:
1 tablespoon whiskey
1 teaspoon vanilla
Refrigerate until ready to use.
Grate 2 cups worth of bittersweet chocolate and set aside.

Take out about 36 ladyfingers. Dip each one in the cold coffee and place into a 9x11″ baking dish. Continue until the entire bottom is lined. Now spread half of the custard over the ladyfingers, then half of the unsweetened whipped cream. Sprinkle half of the grated chocolate and then repeat making a layer of dipped lady fingers, custard, whipped cream and then chocolate. Cover and refrigerate for several hours. I noticed the next day the tiramisu had aged into the perfect consistency, so if you have more ability to plan ahead then I do, make it a day in advanced.

Bits of these days…

May happened so fast, is it true we almost have made it through half this year already? It surely doesn’t feel possible. May has brought many hot days. I feel like I should embrace them, but instead I still detest too much sun. 
Our little neighborhood here hosts an annul parade. Exactly one year ago Sunday, the pie-truck opened during the festivities of this yearly event.
This year we’re far more experienced and no longer the newbies on the block. The pie-truck has had a good year. Winter was harsh, so harsh I often began to think we were nutty dimwits for opening the whole pie deal, but as weather warms and rain becomes an occasional treat, the pie patrons are returning. As well as the resurgence of orders for salad… 

Lazy afternoon naps are something I cherish as often as possible, especially since 
my schedule has returned to morning til night; it’s all pie, all the live long day.

Barefooting… Meandering…

A few weeks ago my good friend, Amanda, and I decided the late afternoon was calling to be walked in. I love walks. I also have recently noticed how much my feet are wanting, shall I even say yearning, to be free of shoes. I grew up barefoot, but over the last—way to many—years I haven’t bothered with too much barefootness. It never had occurred to me to take walks shoeless through neighborhoods—I have always kept shoes on when I am in town. But my feet were begging, and I realized what was stopping me was the thought of walking on filthy sidewalks. Up here it rains a lot, and I like to think it keeps the sidewalks fresh. Either way, it was a necessity…

We are getting snow again…

By late afternoon it was several inches thick so we headed over
to Cathedral Park to play for a short bit…

But the kids got their first ever chance to slide down a hill…
Which of course was very worth it…

Something the kids are not used to… Neither am I for that matter…
But all I could think was hurray for snow!!!

Samurai Exhibit…

A few weeks ago we managed to slip by the Portland Art Museum to see a samurai exhibit . . .
 In addition to samurai, there was also many other incredible pieces of art . . .
In the first room we found beautiful ancient Chinese statues …

Each item had such careful stitching . . .
It must have taken forever to complete one of these . . .

The past few weeks…

A lot fits into a few weeks…
Our house keeps progressing into a warmer, cozier home…
 We worked hard and participated in a craft fair at the kids school…
 We’ve taken walks…
In new areas…
And found neat trails…
With neat trees…
And neat bike racks…
 We’ve made cards…
 Filled with cursive writing, telling our friends how much we miss them…
And we’ve snuck away, to experience this fabulous, new city that we live in!!!

Well hello there Everyone, big changes have been afoot… 
I haven’t blogged in such a while because my world was spinning so fast I didn’t have time to catch the the pieces and put them into tidy post form. This morning as I sit at the table looking out my dinning room window to the grey grey sky I am thinking, how do I start it all off… Is there a good explanation… My family and friends have heard it over and over from our conversations, but in some ways it still seem so abstract. So, to get to the point, we moved to Portland. Portland Oregon. Exciting and fresh, a whole new ball of wax to mold into our world. There was no one reason. There wasn’t a job waiting or elderly relative that needed care. There wasn’t a University that had to be attended. It was solely the desire to live in a place that is just a bit more like us. 
The drive up was long and we landed here late on a Saturday night. The whirlwind to get up here did actually have a reason. Once we had put our sites officially on this town I researched and found a Waldorf charter school. This was a dream come true, I’ve always wished the kids could attend a Waldorf school, but sadly there were no options close enough to our home town. Usually the charter  schools in Portland are very sought after and it takes a long time to get a place. What was so incredible is that when I called I found they had space in each of the children’s grades. A spot for each kid??? This was just too perfect to take lightly. Unfortunately, due to the fact it is government funded they couldn’t hold the places for us, so we did as fast a turnaround as we could to hurry up here and get settled. It took a bit over a month to slam dang dunk it all into place and now here we are. 
As we packed I didn’t allow myself time to think. I didn’t know if I could do it or at least nearly as rapidly if I let my mind wonder over the things that I would miss. My family, so so big and important to me that I almost couldn’t make the change. My friends, many of whom feel like family, also so important. But the bottom line was the fire had been lit, and we knew there was only one direction to go in. 
It feels good. I like it here. I like the city’s smallness and accessibility yet the expanse of opportunity that a small town just can’t maintain. I feel inspired by the food, the openness to different ways of being. I appreciate the rain, the abundance of water that is always so lacking in the area where I grew up. 
It’s exciting to have a whole lot of firsts. First dinner here, first dinner sitting around our new nineteen dollar dinning table which soon will be so second nature we won’t think twice.
